Greek olive oil

Greek olive oil is renowned as one of the best in the world. Its merits have been praised since ancient times.

Third largest olive oil producing country in the world, Greece produces more than 200,000 tons of oil thanks to its more than 170 million olive trees. Greeks are the leading consumers of olive oil per person.

Here there are no large estates stretching as far as the eye can see, but rather small estates often managed by families working in hilly terrain that favors small local productions.

Patrinia

The Patrinia olive tree is medium-sized (3 m high) and prefers rich or medium-composition soils. Its leaves are small and narrow, a distinctive characteristic of this variety. Its fruits are rich and produce high-quality olive oil, ripening between November and December.

Koroneiki

The Koroneiki olive tree is mainly used for olive oil production. It is among the most widespread and best adapted to high-density cultivation systems in the world. It is the most widespread variety for olive oil production, covering 50 to 60% of the cultivated area in Greece. The fruits of the Koroneiki olive tree are small, but offer a high quality oil yield.

An olive variety present in the northern Peloponnese, originating from Aigeilia in the Achaia region.

Organoleptic Profile

This variety produces an olive oil with green olive fruitiness, with olfactory sensations of apple, olive leaf, freshly cut grass.

Aromatic Profile

Its fruity aroma of green banana, apple, with herbaceous notes of olive leaves, is soft and balanced, with a slight bitterness and a peppery finish.

Culinary Uses

Patrinia olive oil is therefore suitable for many uses, particularly in salad dressings, cooking and as a finishing oil.

Family Harvest

The harvest takes place with family or friends, early in November. The olives are then multicolored and tinted with variations of green, purple and brown.

International recognition

Ranis olive oil won the silver medal for the world's best oil in 2025 at the WOC New York competition. Variety: Patrinia!

The production process

From olive to oil, each step is carefully mastered to preserve the quality and aromas of our Patrinia olives.

Harvest

Manual harvest or with electric combs, as a family. Nets are spread under the trees to collect the olives.

The olives are harvested in baskets worn around the neck. For oil preparation, damaged fruits are discarded.

The mill

The olives are brought to the mill the same evening.

The delay between harvest and delivery to the mill must be as short as possible to guarantee the freshness of the olives and the acidity level.

Defoliation and washing

The olives are rid of leaves and twigs, then washed.

A healthy, fresh and clean fruit: that's the guarantee of good olive oil!

Grinding - kneading

Whole olives are crushed and transformed into paste, then gently kneaded for 20-30 minutes.

Kneading brings together small oil droplets into larger drops to facilitate extraction.

Cold extraction

1st cold pressing: the paste is placed on "scourtin" filters stacked in a hydraulic press.

The pressure releases oil and water from the olives, collected in a tank.

Separation and storage

Separation of oil from vegetation water by centrifugation, then storage in stainless steel tanks.

Before bottling, the oil is filtered for better long-term preservation.

Fruitiness

Intensity

Fruitiness represents all the aromas from fresh olives. Our Patrinia oil offers green olive fruitiness with olfactory sensations of apple, olive leaf and freshly cut grass.

The intensity of fruitiness in the mouth is the evaluation of the total importance of aromatic sensations. The aromatic palette of olive oils is incomparably richer than that of other table oils.

Bitterness

Intensity

This is the only taste, in the physiological sense, that can be found in olive oil. Our oil has a light and balanced bitterness.

Bitterness is associated with the presence of natural antioxidants, and bitter oils generally keep well. It decreases with the ripening of olives and the aging of the oil.

Pungency (spiciness)

Intensity

This is a tactile sensation of irritation that can recall the burning of certain spices. Our oil has a pronounced but harmonious pungency.

Like bitterness, pungency decreases with the ripening of olives and is associated with antioxidant action. With the aging of the oil, pungency decreases faster than bitterness.

In the world of table oils, olive oil is a special case because it is obtained from fresh fruit. The use of allusions to other fruits is essential to specify the nature of the fruitiness.
